Hanging with my Boo....
Today I got off early so we got all the chores and errands done before Triston got out of school. Once home, Triston and I settled in on the couch with 5 or 6 episodes of "I Shouldn't be alive" on the DVR.... Now I can hear the backlash now from the people who would balk at the thought of allowing and condoning over 5 hrs of TV being consumed in one sitting, but it was just one of those lazy days that begged for a snuggle on the couch kind of activity with not much brain function needed...
The thing about that show is its actually educational as well, so if Triston and I ever get caught in a snow storm, stranded in the desert, lost in a rain forest, surrounded by sharks in the middle of the ocean, or fall down a ravine and get wedged between some rocks, we will know what to do.... There's my justification :)

Frog legs anyone?
So Triston has this really cool habitat that's made for a variety of creatures. We've housed tadpoles, tiny pond fish and most recently a frog. The kids say its a tree frog, but I picture them as smooth skinned tiny frogs, and this looks more like a miniature toad. About 2 weeks ago I noticed that the food drop door was off and laying next to the habitat. Upon further inspection, I realized we had a Houdini frog on our hands, as he had managed to climb up and out of the small opening at the top of the lid and slink off into the night. We assumed after several days of not finding him, that he perhaps became a little snack for one of the dogs. Triston feared for several nights that the frog would appear inside his pajama pant leg or hop onto his pillow while he slept, because the habitat was located directly over his bed.
I have no idea what would possess the silly frog to leave his space we set up for him, it had all the amenities of "home" complete with pond, rocks, Lilly pads, plants (albeit they are all plastic) and he got live crickets handed to him on a silver platter every week... Maybe he was just trying to see if the grass really is greener on the other side... Now that he is back home, maybe he will appreciate all we do for him, just a little more :)

It's fun to stay at the YMCA....
Saturday's right now mean Basketball for us. Triston is on a team at the YMCA and Steve is the coach. Triston seems to enjoy basketball more than football, maybe due in part to basketball not having "The Shasta Drill" (makes me cringe just typing that out, lol)

The best thing about Friday is......

Weinerschnitzel was actually my first job when I was 16. I remember I used to make myself chili cheese dogs with mustard, kraut & onions on them. SOOOOOO good! I also used to order their chocolate chip cookies, but I ordered them frozen- not cooked. They were stored in the freezer- and we just baked several dozen each day, but I preferred them frozen. This was before the whole Salmonella issue was brought to light...

Crispy Parmesan Chicken
2 boneless, skinless chicken breasts, 6 oz each
1 cup bread crumbs
2 Tbsp grated Parmesan cheese
1/2 Tbsp dried Italian seasoning
2 egg whites
Salt and pepper
1/2 Tbsp olive or canola oil
1 1/2 Tbsp butter
2 Tbsp capers
1/2 Tbsp Dijon mustard
Juice of one lemon
2 Tbsp fresh parsley, roughly chopped
1. Cover the chicken with parchment paper or plastic wrap, and use a meat mallet or a heavy-bottomed pan to pound it until it's 1/4" thick.
2. Combine the crumbs, Parmesan, and Italian seasoning in a wide bowl. In a second bowl, beat the egg whites slightly. Season the chicken with salt and pepper. Now carefully dip each breast into the egg whites and then into the crumb mixture, pressing to make sure it's evenly coated.
3. Heat the oil on medium in a large stainless-steel sauté pan or cast-iron skillet. Add the breasts, and cook them for 3 to 4 minutes or until the crusts are deeply browned and crunchy. Turn them over and cook for another 2 to 3 minutes. Then transfer them to a platter to rest.
4. While the pan is still hot, add the butter. When it's lightly browned—which should take no longer than 1 minute—stir in the capers, mustard, and lemon juice, using a wooden spoon to scrape up any browned bits. Turn off the heat and add the parsley. This is your sauce.
5. Serve the chicken breasts with the sauce drizzled on top, and a side of spinach sautéed with garlic and dried chilies. Makes 2 servings.
Per serving: 497 calories, 61 g protein, 14 g carbohydrates (1 g fiber), 21 g fat, 816 mg sodium

And he's off.... leaving "Boo & me" time
With Brother gone Triston gets a little lonely. This night especially because all the neighbor kids were busy as well. So it gave him and I some time to practice his basketball skills for his game the next morning.
I know im cheating too Robyn, putting more than one image a day on here, but some days are just too hard to pick just one.. and other days its hard to just GET ONE!!!

My little apprentice
At first he didn't get the connection, that what I held and what he held were essentially the same thing ;) He put it on his head
Then I told him to put it on his eye, he merely tried to point to his eye, thinking I was asking him where his eye was. Too cute!
Then he made the connection between our two toys and it was no stopping him. I even got him to say some resemblance of "cheese" while holding it up and snapping his "photos". Someday he may just be a world renowned photographer and I can say "I taught him all that he knows" HAHA :)

Thursday Jan 7th- lost in a book...
Naptime during the day in the babyroom is a very quiet time, one that tempts me often to fall asleep along with the little angels in my care... I have started a new book that Erin lent me to occupy the time.

You go upstairs to fetch something and by the time you get there, you cant remember what it was you were after. Actually, it's not so much that i've forgotten. It's more like i've stopped keeping track. We're past the millennium, that much I know - such a fuss and bother over nothing, all those young folks clucking with worry and buying canned food because somebody was too lazy to leave a space for four digits instead of two- but that could have been last month or three years ago. And besides, what does it really matter? What's the difference between three weeks or three years or even three decades of mushy peas, tapioca, and depends undergarments?

Tuesday Jan 5th- Birthday fever!
I cannot believe that I forgot my camera on the way out the door to take him to dinner for his Birthday! Hence the quality of my photo for today which was taken (embarasingly) on my cell phone. Oh well, at least I had that!

God drops a message right in front of me telling me to trust Him? Who am I to pass it by? When I see a coin, I pray, I stop to see if my trust IS in God at that moment. I pick the coin up as a response to God; that I do trust in Him. For a short time, at least, I cherish it as if it were gold. I think it is God's way of starting a conversation with me. Lucky for me, God is patient and pennies are plentiful!"
When I was out shopping today, I found a penny on the sidewalk. I stopped and picked it up, and realized that I had been worrying and fretting in my mind about things I cannot change. I read the words, "In God We Trust," and had to laugh. Yes, God, I get the message!

Jan 2nd. Making some changes.
Some things that I already had, just needed to be repainted to match the new colors of the room. That is where my picture for today came from. Just a towel holder that I had that was dark green and the new colors are brown and seafoam green, so it needed to be repainted. I cant wait to see how the room will all look when everything is done. Right now its just a mad mess around here with piles of junk, supplies and parts of the bathroom all over the place. I had so many things I wanted to get done over the long weekend, but i guess that wasnt in the plans. Oh well, there's always next weekend, its just not as long.....

Jan 1st To a New year!
So my good friend Robyn reminded me of a really cool idea that I had read about in a photo magazine a while back. Its called Project 365. (http://photojojo.com/content/tutorials/project-365-take-a-photo-a-day/) Its where you take a photo every day for a year that either tries to capture the day’s events in a single photo, shows off a photographic experiment, a photo of someone new you meet, Something you ate for the first time or maybe something you just learned how to do, or just something that made you smile.
Im excited to get started, and its a good thing I had already taken a photo on Jan 1st as Robyn suggested this on the 2nd and its something I want to challenge myself to do for this entire year.
I'm determined to go thru with this and hopefully I remember to TAKE a photo each day (those who know me, know I struggle with memory issues unless its written down!) Hopefully I will have the time every few days to post my pictures and blog about them. This time of year while my Photography business is slower it should be easy, but I know certain times of the year will prove to be a bit more challenging.
To start off the new year I took an image of a few of my favorite comfort items. Warm fuzzy boots, candles and hot Coffee. Dim the lights, pick up a good magazine & get lost in it for a few hours... My idea of a perfect day... Especially if its raining outside!!!
